Angel hair candy: what is pişmaniye?

The Turkish sweet behind angel hair chocolate, how it differs from cotton candy and pashmak, and where to buy it.

Updated October 18, 2026

The “angel hair” in angel hair chocolate is pişmaniye (pronounced roughly pish-mah-nee-yeh), a Turkish sweet made of thousands of fine, buttery strands. It looks like cotton candy, but it is made and tastes differently. Here is what it is, how it compares with similar sweets, and where to find it.

What pişmaniye is made of

Traditional pişmaniye is made by repeatedly pulling cooked sugar together with flour that has been roasted in butter. Each pull doubles the strands until they are hair-thin. The roasted flour gives it a nutty, halva-like flavor, which is why it tastes richer than fairground cotton candy. It is a specialty associated with the city of İzmit (Kocaeli) in Turkey.

Pişmaniye vs similar sweets

Sweet Made from Texture and taste
Pişmaniye (Turkey) Pulled sugar + butter-roasted flour Silky strands, nutty and buttery
Pashmak (Iran) Sugar + sesame or flour, pulled Very similar, often flavored with saffron, rose or pistachio
Cotton candy / fairy floss Spun sugar only Airy, pure sugar, dissolves instantly
Dragon’s beard candy (China) Pulled maltose/sugar around a nut filling Chewy strands wrapped around peanuts or sesame

Why it works in chocolate

The fine strands give a light, melting texture against a crisp chocolate shell and a dense pistachio cream. Pure cotton candy would vanish; pişmaniye holds its shape a little longer thanks to the flour, but it still needs to be kept dry.

Where to buy pişmaniye

  • Turkish, Middle Eastern and Persian grocery stores, often near halva and Turkish delight.
  • Online, in boxes labeled pişmaniye, pishmaniye, pashmak or “Turkish cotton candy”.
  • Check the label for allergens: wheat (gluten), butter (dairy), and sometimes nuts or sesame.

FAQ

Is pişmaniye the same as cotton candy?

No. Cotton candy is spun sugar only. Pişmaniye is pulled sugar with butter-roasted flour, which makes it silkier and nuttier.

Is pişmaniye gluten free?

Traditional pişmaniye contains wheat flour, so it is not gluten free. Check the label of the product you buy.
