Angel hair chocolate recipe
A tempered shell, pistachio cream and Turkish cotton candy, and how to stop the angel hair from melting away.
Updated October 18, 2026
You can make a convincing angel hair chocolate bar at home with a bar mold, good chocolate, pistachio cream and store-bought pişmaniye (Turkish cotton candy). The hard part is not the recipe; it is tempering the chocolate so the shell snaps, and keeping the cotton candy dry so it does not collapse into syrup.
Ingredients (2 thick bars)
- 300 g good white, milk or pink (ruby or colored white) chocolate
- 120 g pistachio cream (or 100 g pistachio paste mixed with 20 g melted white chocolate)
- 40–50 g pişmaniye (Turkish cotton candy), broken into tufts
- Optional: a pinch of flaky salt, chopped pistachios for the top
Equipment: a deep chocolate bar mold (silicone or polycarbonate), a thermometer, a palette knife or bench scraper.
Method
- Temper the chocolate. Melt two-thirds gently, then stir in the remaining third (chopped) until smooth. As a guide, working temperatures are roughly 31–32 °C for dark, 29–30 °C for milk and 28–29 °C for white; follow the label of your chocolate if it lists them.
- Shell: fill the molds, tap out bubbles, then tip the excess back into the bowl so a thin shell coats the sides. Scrape the top clean and chill 10 minutes.
- Pistachio layer: spread a layer of pistachio cream in each shell, leaving a few millimetres at the top.
- Angel hair: press tufts of pişmaniye gently into the cream. Work fast and in a dry room; humidity melts the strands.
- Seal: pour tempered chocolate over the top and scrape flat. Chill 20–30 minutes until the bars release cleanly.
Why the cotton candy disappears: pişmaniye dissolves on contact with moisture. Keep it away from steam, add it last, and seal the bar quickly. A thin layer of chocolate brushed over the pistachio cream before adding the strands also helps.
Variations
- Pink shell: white chocolate with oil-based food coloring (water-based coloring will seize it), or ruby chocolate.
- Strawberry: a thin layer of freeze-dried strawberry powder mixed into white chocolate.
- Dubai-style crunch: fold toasted kataifi into the pistachio cream for a hybrid bar.

FAQ
What is inside angel hair chocolate?
A chocolate shell (often white, milk or pink) filled with pistachio cream and fine strands of Turkish cotton candy called pişmaniye.
Can I use regular cotton candy instead of pişmaniye?
You can, but regular cotton candy is pure sugar and dissolves almost immediately in the cream. Pişmaniye holds its texture better.
